Ingredients Required:
Urad dal (1 cup)
Salt (as per taste)
Oil (for deep-frying)

Method:
1. Soak 1 cup of Urad Dal in water for a few hours. The longer you soak, the better the texture.
2. Drain the water and grind the dal in a grinder to make a smooth paste. Add a little water if needed.
3. Add salt and mix well.
4. Add oil in a deep frying pan for frying the medu vada.
5. Wet your hands with water and take a small amount of batter.
6. Flatten it in the shape of a doughnut, with a hole in the center, using your thumb.
7. Slide the vada into the hot oil.
8. Fry until the bottom turns golden brown.
9. Flip gently and continue frying on the other side until evenly browned.
10. Once done, remove with a slotted spoon and place on a paper towel to remove any excess oil.
11. Continue doing the same with the remaining batter.
12. Serve hot with coconut chutney or sambar.
