Carrot halwa is a delicious and popular Indian dessert made from grated carrots, milk, sugar, and ghee.
Ingredients required:
4 cups grated carrots
3 cups whole milk
1 cup granulated sugar
3 tablespoons ghee
1/4 cup chopped nuts (optional)
1 teaspoon cardamom powder

Method:
1. Heat the ghee in a heavy-bottomed pan over medium heat. 2. Add grated carrots and sauté for about 5-7 minutes or until they release their juices.
3. Add the milk to the pan and cook, stirring often, until most of the milk has evaporated and the mixture has thickened.
4. Add sugar and continue cooking, stirring constantly, until the sugar has dissolved and the mixture has thickened even more.
5. Add chopped nuts and cardamom powder and stir well.
6. Reduce the heat to low and cook the halwa for another 10-15 minutes or until it reaches the desired consistency.
7. Remove from heat and serve hot garnished with more nuts if desired.
