1-literIngredients Required: 

1 liter milk

1/2 cup basmati rice, rinsed and soaked for 30 minutes

1/2 cup sugar 

1/4 tsp cardamom powder

2 tbsp raisins

2 tbsp chopped almonds

2 tbsp chopped pistachios

1 tbsp ghee

A pinch of saffron, soaked in 1 tbsp warm milk

Method: 

1. boil milk in a heavy bottomed pan and bring it to a boil. Turn down the heat and allow it to boil.

2. Add the soaked rice to the milk and cook for 30-40 minutes or until the rice is soft, stirring often to prevent the rice from sticking to the bottom of the pan.

3. Add the sugar and cardamom powder to the milk mixture and stir well until the sugar has dissolved.

4. Add the raisins, chopped almonds, and chopped pistachios to the kheer and stir to combine.

5. In a small pan, heat the ghee and fry the cashews until golden brown. Add it to the kheer and stir to combine.

6. Add the soaked saffron to the kheer and mix well.

7. Let the kheer cool to room temperature and then chill it in the refrigerator for at least an hour before serving.

Serve the chilled kheer garnished with a few chopped nuts on top. Enjoy!
