Ingredients required:
1 cup basmati rice
2 cups water
1 tablespoon ghee or oil
1 cinnamon stick
2 cardamom pods
2 cloves
1 bay leaf
1 medium onion, finely chopped
1 tablespoon ginger-garlic paste
1 green chili, slit lengthwise
1 cup mixed vegetables (carrots, beans, peas, and potatoes) Salt to taste
1/2 teaspoon turmeric powder
1/4 teaspoon cumin powder
1/4 teaspoon coriander powder
1 tablespoon chopped coriander leaves
Fried onion and dry fruits for garnish (optional)

Method:
1. Rinse the rice in cold water and soak it for 20 minutes.
2. Heat ghee or oil in a heavy-bottomed pan or pressure cooker, add cinnamon stick, cardamom pods, cloves, and bay leaf. Let it splutter for a few seconds.
3. Add finely chopped onions and sauté until translucent.
4. Add ginger-garlic paste and sauté until cooked without raw smell.
5. Add mixed vegetables and sauté for 2-3 minutes.
6. Now, Salt, turmeric, cumin, and coriander flour should be added. Mix well.
7. Rinse the water from the soaked rice and add it to the pan. Mix well.
8. Add 2 cups of water and mix.
9. Cover the pan or pressure cooker with a lid and cook on medium heat for 10-12 minutes or until the rice is cooked and water is absorbed. If using a pressure cooker, cook for 2 whistles.
10. Once done, turn off the heat and let it rest for 5 minutes.
11. Fluff up rice with a fork and garnish with chopped coriander leaves, fried onions, and dry fruits.
You can serve vegetable pulav with raita or pickle. Enjoy!
